![]() Just about enough for one person (like me), or for sharing with another, if you’re into that sorta thing. So, when I discovered this recipe for Chocolate Cupcakes for Two from The Baker Chick a year ago, I was absolutely thrilled! It was a God-send – moist, creamy and insanely chocolaty, but most importantly, the recipe made exactly TWO frosted cupcakes! It was the answer to all my prayers! We can’t all say we haven’t been in her place, can we? So you eat one more cupcake, and then another, then just one more and soon you’re a guilt-ridden chocolate covered slob, sobbing on the kitchen floor having inadvertently scarfed down a dozen cupcakes! That does happen to you too, right? Right? right?Įvery time I think of chocolate gluttony, I think of this scene from Sex and the City, with Miranda and the Betty Crocker clinic. And unless you’ve (wisely) managed to give it away to neighbors/friends/just about anyone else, every time you walk into the kitchen, it’s there. After you sate the craving with an offering of one cupcake, the rest is just sitting there on the counter, with naught else to do. Making a whole batch of cupcakes whenever a craving for chocolate hit (which is at least twice a month for me) was just inviting trouble. But that was nothing compared to small batch baking! Because unlike with cooking, where a pinch and a dash can be used interchangeably, you just can’t make the same kind of approximation while baking! Most days, all I ate were instant noodles and this stir-fried vermicelli. You know the hardest part of moving out of your parent’s house, besides trying to survive on your own? Small batch cooking for one or even two! After living in a household of 4, it was a huge adjustment to learn to cook smaller quantities when I moved out. Order ahead and customize them – from fillings to specialty shapes – so they’re perfect for any occasion. When a bakery is known as “the cake place”, you can bet they’re going to have amazing cupcakes! Not only are Bethel Bakery’s cupcakes delicious, they’re some of the prettiest we’ve seen – and we love a good theme like these Shark Week cupcakes! Ok, we haven’t yet, but we need to ASAP. Plus, we’ll take any excuse for a trip to Mount Washington to look at those city views! We love their mini cupcakes – because, let’s be honest, we always want to try more than one flavor at a time. We love their chocolate cupcakes and the surprise filling inside each one. We’ve been fans of the cupcakes at Le Petit since they opened ( read a full feature here)! Their cupcakes feature French buttercream, which is smooth and dreamy. We all know and love some of the staple bakeries around Pittsburgh (think Oakmont Bakery, Prantl’s, and Priory Fine Pastries), but here are 8 *other* bakeries you should visit for cupcakes! Cupcakes are the best of all worlds when it comes to cake: you get to satisfy your cake craving, but you don’t have to commit to only one flavor! Plus, they’re social-distancing-friendly, and you can add that to the list of things we never thought we’d think about.
